El 20 de abril, los residentes del área de Kansas City se reunieron en el Union Station de Kansas City para lo que probablemente consideraron una experiencia sabrosa: la cuarta Comida anual, un evento que muestra las diversas cocinas de América Latina y España.
Los chefs y restauranteros invitados incluyeron al famoso chef Mario Pagan, que representó a Puerto Rico. Según Pagan, quería que Kansas City experimentara los sabores de Puerto Rico.
“Trato de contar una historia de mi isla – las costumbres y sabores con los que crecí – y (trabajo) elevándolos a lo mejor que pueda”, dijo. “La cocina puertorriqueña no es sólo arroz y frijoles … También tiene mucha profundidad …. Nuestros guisados, nuestro cerdo asado, mofongos – y tenemos … muy interesantes y auténticos alimentos fritos llamada ‘Frituritas.’ … Son muy divertidos y muy famosos en la isla. “
Después de lograr una educación de artes culinarias, Pagan se convirtió en un galardonado chef: abrió dos restaurantes en Puerto Rico y tiene dos programas de cocina en Utilísima Fox Latino Network.
Pagán atribuye su éxito a “ser siempre fiel a mis raíces y respetar siempre nuestros ingredientes locales”. Además, las mujeres en su vida han inspirado su carrera.
“Mi madre, mis abuelas, mis tías …. Son casi todas las mujeres que se reunían en la cocina todos los fines de semana para cocinar, y siempre tuvieron un buen momento para compartir comida y recuerdos “, dijo Pagan. “Los recuerdos de todos esos momentos y los aromas que preparaban los alimentos eran -y siguen siendo- la fuerza de mi inspiración”.
Celebrity chef Mario Pagan brings Puerto Rican flavors to Comida

On April 20, Kansas City area residents gathered at Union Station Kansas City for what they probably considered a flavorful experience: the fourth annual Comida, an event that showcases the various cuisines of Latin America and Spain.
The invited chefs and restauranteurs included celebrity chef Mario Pagan, who represented Puerto Rico. According to Pagan, he wanted Kansas City to experience the flavors of Puerto Rico.
“I try to tell a story of my island – the customs and flavors I grew up with – and (I work at) elevating them to the best I can,” he said. “Puerto Rican cuisine is not just rice and beans…. It also has a lot of depth to it…. Our stews, our roasted pig, mofongos – and we have … very interesting and authentic fried foods call ‘Frituritas.’… They’re very fun and very famous on the island.”
After attaining a culinary arts education, Pagan became an award-winning chef, opened two restaurants in Puerto Rico. He hosts two cooking shows on Utilisima Fox Latino Network.
Pagan attributes his success to “always (being) true to my roots and always respecting our local ingredients.” In addition, the women in his life have inspired his career.
“My mother, my grandmothers, my aunts…. They’re pretty much all the women that gathered in the kitchen every weekend to cook – and they always had a good time sharing food and thoughts,” Pagan said. “The memories of all those moments and the aromas whenever they prepared food were – and still are – the driving force of my inspiration.”
