Hispanic blogger shares Grinch-inspired green salsa

By Angie Baldelomar

The animated movie “The Grinch” was released in November 2018 to theaters. Based on the book by Dr. Seuss and produced by Illumination, it is the latest screen adaptation of the story. Starting Jan. 22, people can get the digital version, with the DVD/Blu-Ray available on Feb. 5.
In honor of the digital release, Hispanic blogger Ana Cristina Enriquez, who runs the blog “Mami Glammy,” has created a Grinch-inspired green salsa that is easy to make with the help of some kids.
Enriquez said the idea came from her desire to find ways to spend more time with her children while drawing them closer to their Mexican roots.
“My son Guillermo loved (“The Grinch”), and … I wanted to find an activity that I could do with my kids,” she said.
Enriquez started her blog in 2012 after years of working for various media outlets. Her children are a constant presence in her blog.
“I think children today have to know how to project themselves digitally in cyberspace,” she said. “They need to know how to navigate social media.”
Enriquez encourages families to try her Grinch-inspired recipe at home while watching the movie.
“We (parents) need a space with our children to spend time with them,” she said. “This is a way that’s both cheap and easy.”

Green salsa inspired by “The Grinch”

Time needed: 15 minutes
Ingredients:
–20 tomatillos
–1/2 small onion
–1/4 cup of chopped cilantro
–1-3 jalapeno peppers
–Salt
–Juice of a lemon
–2 avocados

1. Boil the tomatillos.
On the stove, put tomatillos to boil in a pan with water.

2. Blend the tomatillos.
With a little of the water in which you boiled them, put the tomatillos in a blender to blend.

3. Add the rest of the ingredients.
Add cilantro, raw onion, salt and lemon juice. For children, you can do it without the jalapeno peppers.

4. Decide how spicy you want it.
You can use 1 to 3 jalapeno peppers.

5. Cut the avocado into squares.
Once the salsa is liquefied, you will add the avocado to the salsa.

6. Add the avocado to the salsa.
Make sure the avocado squares do not fall apart.

7. Prepare the labels to distinguish the hot salsa from the one that is not.
I divide the salsa in two: One for children and one for adults.

8. Put in jars if you are not going to use it immediately and refrigerate.
It is best to consume the freshly made salsa, but if you plan to use it later you can keep it in glass jars.
