Commentary by Tere Siqueira

Chances are, your grandmother never counted calories, bought a protein shake or followed a trend with a name. She just cooked.

Beans from scratch. Rice. Fresh vegetables. A piece of meat. A warm tortilla. Nothing complicated. Nothing processed. Nothing that came with a long list of ingredients no one could pronounce. And somehow, it worked.

Today, grocery store aisles are full of products promising better health, more energy and faster results. And sadly, in the middle of all that noise, many families’ dietary habits are getting worse, not better.

The truth is that the foundation of healthy eating isn’t new. For many Hispanic families, it has been in the kitchen all along. Here are five ways to bring it back into daily life:

*Cook with ingredients you recognize: If you can picture where an ingredient comes from, it probably belongs in your kitchen. Beans, corn, tomatoes, eggs, fresh herbs and vegetables are among the most nutritious foods available. They also are the foundation of traditional Latin American cooking.

*Choose home-cooked meals over packaged options when possible: Processed foods often contain high levels of sodium, added sugar and preservatives. In addition, cooking at home gives families more control over what they’re eating. A pot of beans with some garlic and onion is more nourishing than most foods that come in a box.

*Adapt traditional recipes, don’t abandon them: Many traditional Hispanic dishes are already nutritious. Before replacing a family recipe, consider whether a small change, such as less oil, less salt, more vegetables, might be enough.

*Trust the basics: New diets appear every year, each one promising to be the final answer. Most of them fade. What doesn’t fade is the evidence behind simple, consistent habits. Eat real food. Cook at home when possible. Include vegetables and legumes. Avoid excess sugar and processed products.

*Plan ahead: Many families turn to fast food or packaged meals not because they want to, but because they’ve had no time to cook anything that day. Having a few simple ingredients ready – cooked beans in the fridge, rice, fresh vegetables – makes it easier to assemble a real meal quickly, even on a busy weeknight.

*Pay attention to portions without obsessing over them: Traditional Latino cooking already has portion balance built into it. A plate with rice, beans, some meat and vegetables covers most nutritional needs without counting anything. The problem often comes not from the food itself, but from oversized portions, especially with foods high in fat, salt or sugar.

Come comida real.

Cocina en casa cuando puedas. Incluye verduras y legumbres.

By Tere Siqueira

The Hispanic community is at a critical juncture in addressing its mental and emotional well-being, according to clinical psychologist Dr. Norby Forero.

Forero, a native Colombian with more than a decade of experience who’s based in the Greater Kansas City área, discussed how stress, trauma and unaddressed emotions are quietly affecting the well-being of the Latino community during a recent interview with Dos Mundos. She also discussed what steps individuals can take to reclaim their mental and emotional health.

One of the most common questions Forero receives is how to tell the difference between feeling sad and experiencing clinical depression.

“Sadness is a normal emotion,” she explained “But when it lasts more than two weeks and starts interfering with daily life – like sleep, appetite, relationships or motivation – we’re talking about something deeper.”

A key symptom of depression is the loss of pleasure in things that used to bring joy – a clinical term known as anhedonia – Forero said.

“When you stop enjoying the things you once loved, it’s time to pay attention,” she said.

In Hispanic culture, when confronted with chronic depression and other mental health issues, the instinct is often to offer quick solutions or dismiss emotional struggles with phrases such as, “You can get over it” or “Don’t think about that.” But that kind of response often causes more harm than good, according to Forero.

“What people need most is empathy,” she said. “We need to stop trying to fix and start listening. Say: ‘That sounds really hard. I’m here for you.’ That kind of support can be life-changing.”

Mental health affects more than the mind. Chronic stress has serious consequences for the body, Forero said.

“We call it a silent killer,” she said. “High stress levels raise cortisol, which increases the risk of heart disease, diabetes, digestive issues and more.”

As proof, Forero shared the story of a former patient who had suffered from debilitating gastritis for years. Medical treatments had failed. But after several months of therapy, the symptoms disappeared.

“The root cause wasn’t physical; it was emotional,” she said.

According to Forero, stigma remains one of the biggest barriers to mental health care among Latinos. She attributes that stigma to three particularly damaging beliefs: therapy is only for the “crazy”; showing emotion is weakness, especially for men; and talking won’t change anything.

“We avoid therapy because we think it means we’re broken,” she said. “But going to therapy is no different than going to the dentist when you have a toothache. It’s not weakness; it’s wisdom.”

Other reasons many Hispanics avoid seeking professional help include the cost of therapy sessions. But Forero urges the community to not let that or other potential barriers stop them from learning.

“We all have phones,” she said. “We all scroll TikTok. Use that time to learn something that can help you heal.”

Through her own Spanish-language YouTube channel, which has more than 200 videos, Forero offers free tools, insights and guidance on anxiety, stress, relationships and more. For free resources, videos and practical tools in Spanish, visit Forero’s YouTube channel at @PreguntaleANorby.

“There are countless free resources out there,” she said. “Even if you can’t go to therapy right now, you can start learning how to care for your mind.”

Forero also discussed the current trauma many immigrant families feel. Daily life can feel like living under siege, she acknowledged.

“The brain doesn’t know the difference between the fear of deportation and the fear of being chased by a predator,” Forero said. “That constant state of alert, especially in children, creates deep emotional scars.”

To help address those scars and other forms of trauma, Forero uses what she calls the “circle of control” in her workshops to help people manage overwhelming emotions. She invites participants to hold out their arms in the shape of a circle and tell themselves that what they can control is inside the circle – thoughts, feelings and actions. What they can’t control – issues such as politics, other people, the national economy – fall outside the circle. Focusing on what can be controlled is a way to find peace in the middle of uncertainty, Forero said.

“Either you take control of your life or the situation takes control of you,” she said. “Mental health issues don’t go away on their own. Ignoring them just makes things worse. But facing them – even little by little – can change your life.”

“Aunque no puedas ir a terapia ahora, puedes empezar a aprender cómo cuidar tu mente.”

According to the U.S. Centers for Disease Control and Prevention (CDC), the number of flu cases nationwide is still low, but is on the uptick, particularly among kids.

In its Week 45 report, posted recently on its website, the CDC pointed out the percentage of specimens testing positive for influenza and the share of emergency department visits for influenza among children both rose during the week covered in the report. The report specified there were 72 flu virus detections, as reported by labs at public health agencies, including 67 influenza A cases.

No influenza pediatric deaths had been reported this season, as of Week 45.

Per the CDC report, COVID‑19 and Respiratory Syncytial Virus (RSV) are active in addition to flu viruses.

To reduce the chances of getting the flu, health experts advise getting an annual flu shot. Flu vaccinations are recommended for anyone ages 6 months and older. In Kansas, the state health department’s influenza surveillance webpage notes that residents ideally should’ve been vaccinated by the end of October. Vaccinations, however, can still be beneficial.

Other recommendations by health experts include maintaining good health habits. Those include handwashing, especially after using the bathroom; covering the mouth when coughing or sneezing; and staying home when ill.

Flu cases are increasing, but still low

The Community Blood Center (CBC) recently declared a blood emergency for the Greater Kansas City area.

On Aug. 11, the nonprofit blood collection and distribution organization stated via a press release that regional supplies were “below a two-day inventory, far below the seven-day threshold needed to meet hospital and patient needs.” According to the CBC, levels of O-negative and O-positive were “especially severe.” It attributed the shortage to more trauma incidents reported at hospitals and a seasonal downturn for donations, caused by various factors, including the latest heat wave.

“We urgently need the community’s help to rebuild the blood supply and prevent this situation from becoming more dire,” said Chelsea Tibbetts, executive director, as quoted in the news release.

The release also quoted Dr. Douglas Rivard and Kansas City, Missouri, Mayor Quinton Lucas. Rivard, executive vice president and physician in chief with the Children’s Mercy hospital system, said Children’s Mercy depends on “a reliable blood supply” to help save lives.

Lucas urged Kansas City residents to donate blood.

“The blood emergency we’re experiencing in Kansas City is about real people in our community who need our help,” the mayor was quoted as saying.

The CBC stresses that one blood donation can save as many as three people. In its news release, it stated that new federal guidelines have made more individuals eligible to give blood.

To schedule an appointment to donate with the CBC, call 1-(877)-468-6844 or visit savealifenow.org.

The Kansas Department of Health and Environment (KDHE) is encouraging women to get screened for breast and cervical cancer.

It is doing so through the Early Detection Works (EDW) program. EDW conducts free cancer screenings for eligible women, KDHE information states.

Per the KDHE web site, women interested in getting screened may qualify for cervical cancer screenings if they’re ages 21-64 and may qualify for breast cancer screenings if they’re ages 40-64. Other requirements include income guidelines, which vary by household size.

If a woman qualifies, she’ll receive an enrollment number that’s valid for one year. The number should be presented to an EDW-affiliated health care provider when scheduling a screening appointment, KDHE information states.

If a screening shows abnormal results, the program covers most follow-up tests, including biopsies or imaging. Women will work directly with their provider to plan any necessary next steps if there are abnormal results.

For more information or to enroll in the EDW, call 1-(877)-277-1368.

EDW encourages females under 21 who are experience possible cervical cancer symptoms and under 40 who are experiencing breast cancer symptoms, or have other health concerns, to still call the toll-free number to explore other resources.

By Tere Siqueira

The Greater Kansas City area has seen a jump in HIV infections.

As the news agency The Beacon recently reported, infections jumped from 206 in 2023 to 227 in 2024 for an 11-country area of Missouri and Kansas, citing data from the Kansas City, Missouri, Health Department. Sean Ryan with the department told the news agency it was the second straight year infections had increased.

The increases are partly because of the pausing of outreach and testing programs during the height of the COVID pandemic, Ryan told The Beacon. If services continue to be disrupted, then there could be additional increases, Ryan cautioned.

According to The Beacon, services could continue to be disrupted, given the uncertainty health agencies face regarding federal funding. As multiple news agencies reported, the Trump administration recently passed the One Big Beautiful Bill Act. As news agencies also reported, the legislation could result in cuts to HIV-related programs.

Per news agency reports, the legislation also could result in millions of Americans losing health insurance. That could make it more difficult for people at risk of HIV to access prevention programs and for HIV patients to be treated.

As The Beacon reported, Missouri was experiencing delays regarding HIV outreach before the One Big Beautiful Bill Act had been passed. On June 17, Missouri’s Department of Health and Senior Services instructed the Kansas City Health Department and other agencies in the state to suspend their federally funded HIV prevention work because of delayed reimbursements. Funding was approved June 26, The Beacon stated, citing Ryan as its source.

People who might be affected by reductions in federal funding have some options. They include undergoing free HIV testing at select locations of the Walgreens drugstore chain or though government agencies and nonprofit organizations that offer them.

The Kansas City Health Department is one agency that offers free HIV testing. As The Beacon reported, it did so during June through a mobile clinic that was set up at Walgreens locations and community events like Health on the Block, staged at Kansas City Central High School.

During the Health on the Block event, 32 people were tested for sexually transmitted infections and four positive cases were detected, The Beacon reported.

“That’s a huge return on investment,” Ryan told the news agency.

Interview by Tere Siqueira

When it comes to health, information is seemingly everywhere.

Wisdom, however, seems more difficult for people to find.

To get honest answers, Dos Mundos recently talked with Dr. Marisol Rodríguez, an internist and primary care physician. In this interview transcript , she breaks down what it means to live a healthy life and offers practical tips anyone can follow.

Dos Mundos: What does it really mean to live a healthy life?

Marisol Rodriguez: To me, living a healthy life is about balance. It’s making choices every day that support your body and mind – … not just avoiding illness, but actually feeling good, having energy and being able to enjoy your life. That includes eating well, moving your body regularly, getting enough sleep, managing stress and building strong relationships. You shouldn’t try to being perfect. Instead, you should focus on being consistent and intentional.

DM: What are the key pillars of a healthy lifestyle?

MR: I’d say there are five main pillars. First is nutrition – eating a variety of whole, unprocessed foods, mostly plants. Then, physical activity, … not just going to the gym, but staying active throughout the day.

Sleep is huge. People underestimate how much poor sleep affects everything from mood to metabolism.

Mental health is another big one. … We can’t separate our physical and emotional well-being.

And finally, preventive care – … getting your screenings, vaccinations and regular checkups. That’s how we catch problems early or even avoid them altogether.

DM: How important is mental health in the overall picture?

MR: Honestly, it’s foundational. If someone is anxious, depressed or under chronic stress, it’s going to impact everything else – … how they eat, sleep, move, even their immune system. I always tell my patients, “Mental health is health. And it deserves the same attention and care.” Whether it’s therapy, medication, meditation or simply talking to someone, it all makes a difference.

DM: What are some common health mistakes people make without realizing it?

MR: A few come to mind right away. One is being too sedentary. You can go to the gym for an hour but still spend 10 hours sitting – and that takes a toll. Another is skipping regular checkups because they feel fine. A lot of conditions, like high blood pressure or high cholesterol, don’t have symptoms early on. Also, people often underestimate stress. … They power through without realizing how much it’s affecting their health.

DM: What advice would you give to someone who wants to start living healthier but feels overwhelmed?

MR: Start small. Pick one thing. Maybe it’s drinking more water, maybe it’s going to bed 30 minutes earlier, maybe it’s taking a 10-minute walk after lunch. Don’t try to overhaul your entire lifestyle overnight. … It’s not sustainable and it’s discouraging. Just focus on the next right step and build from there. Health is a marathon, not a sprint.

DM: How often should people see their primary care doctor if they’re generally healthy?

MR: Once a year is a good rule of thumb. That yearly visit gives us a chance to look at the big picture. … Your blood work, blood pressure, screenings, mental health, habits, everything. Even if you feel great, it’s a good check-in to make sure you’re on track and to catch any issues early.

DM: What’s one underrated habit you think more people should adopt?

MR: Walking. Just walking. It’s low-impact, easy to fit into your day, and has huge benefits… physically and mentally. It helps with heart health, digestion, blood sugar, even mood and creativity. I always tell my patients: if walking were a pill, everyone would be taking it.

DM: Please send a final message for people to keep in mind about living a healthy lifestyle.

MR: If there’s one thing I want people to remember, it’s this: Your health doesn’t have to be complicated. You don’t need to follow trends or be perfect; … you just need to show up for yourself a little each day. Small steps lead to big changes. And it’s never too late to start making better choices. Your body will thank you for it.

MR: Empieza poco a poco.

Although measles was eliminated in the United States, a recent outbreak in the country has raised alarms. It also reminds us of the importance of getting vaccinated.

According to a report from the Centers for Disease Control and Prevention, between January 1 and April 17, 2025, a total of 800 measles cases were reported across the country. This number represents the second highest annual case count in 25 years. 82% of these cases were linked to outbreaks in New Mexico, Oklahoma, and Texas.

In the case of Kansas, the Kansas Department of Health and Environment (KDHE) reported 23 confirmed cases of measles as of March 26th in 6 southwestern Kansas counties including Stevens, Morton, Grant, Haskell, Gray, and Kiowa.

According to the KDHE Measles Outbreak website, the cases in Kansas have a possible link to the outbreaks in Texas and New Mexico.

The KDHE has warned people that additional cases can occur, especially among people who have not been vaccinated.

For people that want more information, the KDHE has launched a website www.kdhe.ks.gov/measles. The website includes an updated 2025 Kansas Measles Outbreak Dashboard, providing current data on cases. In addition, it offers resources for checking immunization records and recognizing measles’ signs and symptoms.

The CDC has emphasized the importance of vaccination to prevent future outbreaks.

Vaccines are considered one of the most effective things when preventing countless cases of disease and death.

To discuss vaccination options talk to your health care provider.

By Tere Siqueira

Artificial intelligence (AI) continues opening doors in the early detection of breast cancer.

According to a report from breastcancer.org, a study led by a Washington University professor has shown that an AI model trained to analyze several years of a woman’s mammograms can predict breast cancer risks more accurately than traditional questionnaires. Per the study, the AI model “was 2.3 times more accurate than” the Tyrer-Cuzick questionnaire in predicting breast cancer, based on the sample groups examined.

Lead study author Shu (Joy) Jiang told breastcancer.org that women in three races have been tested using the AI model. She also told the website there’s a desire among the research group to test women in other ethnic and/or racial groups, including Hispanics.

The study adds to growing evidence that AI can improve breast cancer care. Recently, healthcare-in-europe.com posted the results of a study conducted in Germany. It “demonstrated that artificial intelligence … can improve breast cancer detection rates by nearly 18% within Germany’s Mammography Screening Program.”

The adoption of AI tools in mammography is gaining momentum in the United States as well, with AI technologies being approved by the U.S. Food and Drug Administration. But like other professions, the use of AI in health care has raised some concerns. A 2024 post on the Harvard Medical School website, for example, expressed concern that AI systems could still reflect the biases of the humans who create them. Concerns others have expressed include how AI testing will be covered by insurance.

By Tere Siqueira
Health experts claim that effectively managing stress involves more than common solutions, such as meditation or simple breathing exercises.
Instead, they advocate for precise, scientifically validated strategies designed to recalibrate the body’s internal stress mechanisms. Here are activities recommended by health experts for mastering stress and achieving optimal wellness:
*Forest bathing: Originating in Japan as Shinrin-yoku, forest bathing involves immersing oneself in nature without distractions. Research shows that regularly spending mindful time surrounded by trees lowers stress hormone levels significantly and improves overall mental clarity. Experts recommend taking at least 20 uninterrupted minutes weekly to deeply experience nature, without headphones or smartphones.
*Cold exposure therapy: Controlled exposure to cold water might sound intimidating, or even uncomfortable, but it can dramatically reduce stress levels. A 30-second to 1-minute cold shower or plunge daily helps activate the vagus nerve, calming the body’s autonomic nervous system and improving emotional resilience.
*Intentional digital fasting: This involves strategically disconnecting from all screens for short periods regularly. An hour daily or a half-day weekly can reset the body’s dopamine levels, significantly reducing stress and improving focus. When fasting from all screens, activities like cooking, sketching and gardening are recommended to achieve amplified relaxation benefits.
*Consuming adaptogens: Adaptogens are natural, stress-regulating herbs. They include ashwagandha, rhodiola and holy basil. Clinical studies confirm that adaptogens help balance the body’s stress hormones and increase energy without the caffeine jitters caused by coffee or rushes caused by sugar. Experts advise consulting with a health care provider about integrating adaptogenic teas and/or supplements into one’s daily routine.
*Scheduled creative “play”: Experts recommend engaging in activities such as painting, writing short stories and/or building something by hand to activate multiple areas of the brain and break stress cycles. Experts recommend setting aside a dedicated hour weekly for creative play.

Here are some valuable resources that offer stress relief through counseling, wellness programs, and holistic therapies in the KC area:
*The Family Conservancy: It provides bilingual (English and Spanish) counseling services for children, families, couples, individuals, and groups. Their Wyandotte County clinical office specializes in meeting the mental health needs of the Latino community. More information can be found at https://thefamilyconservancy.org/counseling-service-in-spanish/ or by calling (913) 573-1110.
*El Centro Inc.: The nonprofit organization focused on empowering Latinos through health, education, and financial programs. They provide culturally relevant mental health resources, wellness education, and social services. Visit https://www.elcentroinc.com/ or call (913) 677-0100 for assistance.
*Capaz Counseling: The organization offers therapy for Spanish-speaking adults and teens in Kansas and Missouri. They specialize in trauma-informed care, mind-body therapy, and mental health support tailored to the Hispanic community. More details at https://www.capazkc.com/ or call (913) 738-4177.
*Hand & Land specializes in organic wellness products, stress-relief teas, and holistic health services, offering a natural approach to reducing stress and improving well-being.
